I just have a few questions revolving around the holidays that I need assistance on as I need to plan out the menu in advance. Xmas dinner - Turkey, stuffing, gravy, coleslaw and a couple of vegtables. The concern here is left over turkey is it safe?, the stuffing and gravy are both home made so any ingredients that need to be avoided and the stuffing is made from stale bread chunks, the coleslaw contains miracle whip is that ok. thanks for the help take care trg247 Link to comment Share on other sites More sharing options...

Since the biggest issue seems to be with the proteins breaking down, it should be OK. Here's some suggestions anyway. Xmas Dinner Day: 1. For the meal, just cut off as much as people are eating. 2. After the main meal, dismantle the turkey completely, taking all the meat off the bones. If you don't make stock from the leftover bones, dispose of them. Pack the meat in containers, set in the refrigerator to cool. Next morning: 3. Take out the cold chunks of turkey and slice for sandwiches - it's easier when the meat's cool. Bag up one or two days' worth for the refrigerator. 4. Package the rest for later turkey hash, stews, soup, salad toppings, etc. And freeze it. That way none of the meat is left sitting at temperatures and times that allow it to begin to spoil. As a benefit, you'll probably get to use the whole turkey. Just follow the same rules as you do with other food; meaning unless the food has spoiled, you should be fine. I ate all of the things you listed while on Parnate with no problems whatsoever. My family never made changes to holiday dinners, and I was fine. My uncle did smoke one bird but also had another one so I just avoided the smoked one. Did you see the dietician? Was it helpful? Everytime I would ask a question about a certain food all she would say is use caution.
